I love Insanity. I’ve seen friends lose weight, gain stamina and endurance and lean muscle tone on Insanity. What I do know, however, is its INTENSE so if your knees hurt, it may not be where you want to start. And, with your height and current weight, you are very possibly right that your knee pain is a direct result. When I’ve put on weight in the past, first thing to suffer was my joints. Start taking Glucosamine or Shark Cartilage supplements to help with joint health. Also, research some tendon building exercises (I’ll post some in a video in a week) to help build strength AROUND your joints.
As for butt building exercises, if you want to avoid squats/lunges right now, invest in a pair of ankle weights, get on all fours and do reverse leg raises and fire hydrants (I do a variation of reverse leg kicks in during my leg day posts… its where I have the cable strapped to my ankle and I kick back.

Ok lets handle the back curve. Yes, mine is pronounced through genetics in part. However, I did gymnastics starting at age 2 and figure skating. So I developed musculature that has stayed with me. Your body develops “muscle memory” from consistent strength training of some sort over a lengthy period of time. To get that curve, you have to do exercises like lat pull downs that strengthen your lateral back muscles, seated row and back extensions as well as exercises to develop your core, including your obliques. You can’t have a fit back without having a toned and strong abdominal section.
As far as squats, I switch from doing no weight/high rep (like 400 reps) or weighted squats, where I vary the amount of weight with the amount of reps I commit to. I also like to superset my squats with lunges.
